Steps to make Pumpkin Cheesecake:
  1. Preheat oven to 350°.
  2. Mix cream cheese, sugar, and vanilla with electric mixer on medium speed until well blended.
  3. Add eggs and mix until well blended. Do not overbeat after adding eggs.
  4. Spread 1 cup of the batter in the pie shell.
  5. Stir pumpkin and spices into remaining batter.
  6. Spread pumpkin batter over batter already in pie crust to form second layer.
  7. Bake at 350° for 35 to 40 minutes or until center is almost set.
  8. Cool. Refrigerate 3 hours or overnight.
  9. Top each serving with 1Tbsp of whipped topping.
  10. Ready to serve and ENJOY!
