  4. Get 1/3 cup powdered Sugar
  5. Make ready 1 tsp Vanilla Essence
  6. Prepare 1/4 tsp Baking Powder
  7. Get 1/4 tsp Salt
Steps to make Delightful Pink Beetroot Cookies:
  1. First of all, prepare beetroot puree, wash, peel and chop the Beetroot. Then pressure cook with just enough water to 3-4 whistles or until soft. Cool it completely and make a thick puree(use little water if required).
  2. In a bowl, sift flour, baking powder and salt. Keep aside.
  3. Now blend butter, sugar and vanilla essence (I used food processor). Add Beetroot puree too and Mix everything well.
  4. Add this wet mixture to dry ingredients and mix it well to make a semi-thick consistency mixture. (The dough should be sticky).Cover and refrigerate for 30 minutes.
  5. Pre-heat the oven at 180°C and pour the above mixture in a Piping bag and put nozzle of your choice.
  6. Grease and dust the baking tray with some flour. Pipe the above mixture in shape of cookies. Keep a distance of 1 inch between the the cookies as during baking it’ll rise.
  7. Bake it for 10-12 minutes at 180°C or till bottom of cookie is golden brown.
  8. Once cooled, store in an air-tight container. Enjoy!
  9. Ready to serve and ENJOY!
