  32. Make ready 1 cup heavy cream
  33. Prepare 1/4 tsp salt
  34. Get As needed- Juice of one lemon
  35. Get Ingredients of Guacamole Salsa
  36. Make ready 1/2 avocado peeled and roughly mashed
  37. Make ready 1 small onion finely chopped
  38. Make ready 1 small deseeded finely chopped tomato
  39. Make ready as per taste salt
  40. Take as per taste black pepper
  41. Make ready as required fresh chopped coriander
  42. Prepare as Required Lemon juice
  43. Get For cheese dip
  44. Make ready 1 1/2 tbsp butter
  45. Prepare 1 tbsp maida
  46. Make ready 1 cup milk
  47. Take 1 cup cheese (2 cheese slices+cheddar)
  48. Prepare 1/2 cup Amul fresh cream
  49. Prepare to taste Salt and black pepper
  50. Prepare Pinch turmeric powder
  51. Make ready For Salsa
  52. Prepare 1 finely chopped onion
  53. Take 2 tomato finely chopped
  54. Make ready 1 tsp Garlic paste
  55. Get as required fresh coriander
  56. Prepare as per taste some chili flakes

  58. Prepare 1 tsp Olive oil
  59. Take as required black pepper

Steps to make Nachos Bar at home:
  1. For Maize nachos, mix both the flours, oil, carrom seeds and salt Knead the dough with water on a piece of greased plastic sheet(I took two,one for bottom and one for top).Roll the dough into thin chapatis. Prick the rolled chapatis with the help of fork.
  2. Cut them as shown in the pic. Fry them on medium flame till turn golden in color.
  3. For Rice nachos, Take water, heat it add salt and rice flour to it. With help of whisker, mix it together. Keep the flame to lowest, cook for 5 mins. Switch off gas and keep the mixture covered for 5 minutes. Remove the lid after 5 minutes, grease your hand and knead the rice flour into a dough. Keep mixing till all the ingredients incorporate into the mix and you get a smooth dough.
  4. Heat oil, keep the flame at medium with help of greased plastic sheet as mentioned above, make nachos as shown inthe pic.Fry them on medium flame. These will be white in color do not wait for them to change color to golden.Cool them completely. Combine, all ingredients of cheese powder together in a bowl in an airtight box.
  5. Keep some rice nachos in bread box and sprinkle this cheese powder.Close the lid of bread box shake it well such that nachos get coated with cheese powder.You can do the same with maize.
  6. Now let us make Refried kidney beans for nachos. Take a pan, add one tbsp olive oil,add chopped onion and saute till turn soft. Add garlic. chopped tomatoes and cook till tomatoes become soft. Add salt, red chili powder,Maggi masala, lemon juice, coriander leaves and a tsp of tomato sauce. Add some boiled and slightly crushed kidney beans, add water to combine it into thick chunky sauce add some jeera powder.
  7. Coming to our cheese sauce. In a non-stick pan, take butter melt and lower the flame as you add maida. Continuously stir till you get a pale paste of butter and Maida. Add Amul cream, stir Mix continuously no lumps should be formed. Add in milk and cheese, continuously stir so that cheese melts and mixes nicely. Add in pinch of turmeric powder to give a pale yellow colour to dip, add salt and black pepper to taste Keep the flame low to combine all and form a cheesy dip!
  8. For guacamole, This is an authentic Mexican salsa/dip. Take finely chopped onions, mix in deseeded tomatoes. Peel and slightly mashed avocado, mix add salt and black pepper to taste. Drizzle lemon juice and coriander. If you want to use it in salsa form. Let it remain like this Else for using it as dip, just give one churn in mixer and you will get nice thick Guacamole dip.
  9. For sour cream, take heavy cream chilled, beat it a little. Add salt to it and add lemon juice to it. Do not stir. Cover and keep it in fridge for sometime. Let it set and then beat it with a whisker. Sour cream is ready you can make this sour cream a day before of serving Store in an airtight jar in the fridge. Take it out garnish with coriander leaves.
  10. For salsa, Add little oil with tomatoes along with salt. Let them cook and become soft. Add 2 tbsp water to nake it little thick. Add 1/2 tsp sugar, mix. Switch off the gas and add rest of the ingredients like onions, capsicum, lemon juice and fresh coriander. Mix and let it cool. This gives a very refreshing flavour to the salsa.
