- Mix unsalted butter into crackers and set it into cake mold and fridge until ready
- Bloom gelatin powder in cold water and set aside (at least 5 minutes) but before using it microwave for 10 seconds
- Whip cream cheese and caster sugar (1) and lemon juice and Greek yogurt until smooth
- Mix in the gelatin part to the cream cheese part
- Using a hand-mixer, whip whipping cream and caster sugar (2) until fluffy
- Then using spatula, mix whipped cream part and cream cheese part together until smooth
- Separate the batter into two bowls, one more than the other for the two color cake
- Add blueberry puree into one of the batter (to be honest I just add it in until I get the purple color I wanted- 1tbsp at a time)
- Take out the base part from the fridge
- Pour in the white batter first then the purple batter (the one blueberry puree mixed in)
- Decorate using blueberry puree and fresh blueberries and additional whipped cream as desire
- Fridge the cake for at least 4 hours then enjoy (sorry I only have this photo from my IG story LOL we cut it and eat it right away but I will take better photos next time)
