- Wash and soak pink masoor dal for 30 minutes Grind it into paste using minimal water
- Grind ginger n garlic with green chilies into a paste Chop onions finely.
- Heat 2 tablespoon oil in a heavy bottom pan. Add cumin seeds and asafetida.
- Add chopped onion and fry till onion turn golden brown in color. Add ginger garlic paste Keep stirring
- Now add the masoor dal paste in the pan, roast over low heat stirring continuously till it turns light brown in colour.
- Add salt, red chili powder and amchoor powder and mix well Add chopped Coriander leaves.
- Dal is ready when it leaves sides of the pan and all the moisture is evaporated. Let the mixture cool down little bit.
- Grease a large plate with little oil Evenly spread the dal mixture in the plate with 1/4 inch thickness. Let the mixture set in the fridge for 1-2 hours.
- Once mixture is nicely set, cut into equal shape squares.
- Take oil for frying in a pan I have pan fried them one can shallow fry or deep fry too Let the cutlets be crispy & brown from both the sides.
- Serve Masoor Dal Cutlet warm with green chutney.
- Note These cutlets can be made and stored in the fridge and fried at the time of serving
