  2. Get 1 1/4 cup crushed cookies
  3. Prepare 1/4 cup sugar
  4. Make ready 150 mls Extra Virgin Olive Oil from Spain
  5. Prepare Cheesecake Filling:
  6. Take 1 (225mls aprox) block cream cheese softened
  7. Make ready 1/2 cup sour cream
  8. Take 2/3 cup sugar
  9. Take 3/4 tsp vanilla
  10. Prepare 1 cup heavy cream
  11. Prepare 850 grams of canned mandarins or fresh peeled mandarins
Steps to make Mandarin Cheesecake:
  1. Crust: Mix together the crumbs sugar and Extra Virgin Olive Oil from Spain in a bag until well combined.
  2. Press the crumbs into a 25cm pie pan. You can either freeze the crust or cook it. It holds together BETTER if it’s cooked but will work either way. If baking - preheat oven to 200 C bake for 7 mins and let cool completely.
  3. Cheesecake Filling: Drain the mandarin oranges and place on a paper towel. Dry slightly.
  4. Beat the cream cheese sour cream sugar and vanilla on medium speed until smooth.
  5. In another bowl whip the heavy whipping cream until medium to stiff peaks form. Then gently fold in the whipped cream into the cream cheese mixture.
  6. Cut up half of the mandarin oranges and stir into the mixture.
  7. Plop and spread into the pie pan.
  8. Place the rest of the mandarins over the top of the pie freeze for 3-4 hours.
  9. Take out 15 mins prior to serving cut and enjoy!
  10. Ready to serve and ENJOY!
