  1. Get 500 gm fine amaranth/rajgira flour
  2. Prepare 200 ml cooking creme or homemade creme/malai
  3. Get 300 gms sugar

  5. Get 1.5 teaspoon baking powder
  6. Get 1/2 teaspoon baking soda
  7. Take 8-10 pistachios slivered fine
Instructions to make Gluten-free, Amaranth Cookies:
  1. Place all the dry ingredients except sugar in a bowl and mix well
  2. In another bowl, mix sugar and creme until, the sugar dissolves completely
  3. Slowly sieve the dry ingredients into the creme-sugar mix
  4. Keep whisking folding all the ingredients well until combined
  5. Refrigerate the mixture covered with a cling foil wrap for 15-20 minutes
  6. Preheat the oven to 180 degree celcius
  7. Grease your palms and scoop out small portions out if the mixture and roll into cookies
  8. Place them on the baking tray aligned with parchment paper
  9. Place pieces of pistachios over the prepared cookies
  10. Bake the cookies until done approximately for 10-12 minutes
  11. Let cool and store airtight
  12. Tip: the cookie dough will be mushy and sticky hence slight refrigeration is needed. Unlike the other cookie dough, anaranth cookies dough shouldn’t be very stiff to be rolled flat. Orelse they turn out to be very rough/hard post baking
  13. Ready to serve and ENJOY!
