Instructions to make Coconut cookies:
- Seive 160gms wheat flour, 1/2 tsp baking powder, 1/4tsp baking soda, 1/4 tsp salt.
- Mix 110 gms unsalted butter and 110 gms castor sugar. Till light and fluffy.
- Add the seived flours and 1 cup desicated dry coconut. Mix. Add 3 tbsp mik and 1 tsp vanilla essence and make a dough.
- Refrigerate the dough for 1/2 hours.
- Make small balls, press slightly and bake at 180°C for 15 to 20 minutes.
- Stays fresh for about a week.
